4 Delicious & Easy Recipes for Kale Chips

Let me just start by saying…kale chips have seriously changed my life!

If you need to get more greens in your diet, and you’ve tried salads, tried green smoothies…kale chips just might be the way to go. They certainly were for me! I make them all the time and have bags and bags of them laying around.

Let me continue by saying that buying kale chips at the grocery store isn’t usually worth it…you can spend upwards of $5 on a tiny, snack-sized bag…or, you can buy kale from the farmers’ market and make tons of your own.

Here are 4 recipes.  If you’re looking for the nut-free or soy-free ones, I labeled them, so watch out for that.  But pick your favorite and get snacking!

Recipe #1 – Zesty Sunflower (Nut-Free, Soy-Free & Frugal, too!)

Ingredients

  • 1 c sunflower seeds
  • 1 TBS agave nectar
  • 1 TBS cold-pressed sesame oil
  • 1/2 c nutritional yeast
  • 1 TBS Tandoori seasoning (or chili powder would work here)
  • 2 TBS flax oil (or extra virgin olive oil. I like flax because of the omega 3s)
  • 1/2 c water
  • 10 c kale (this is approximately 2 medium-sized bunches)

Instructions

  1. Blend everything together except the kale. Set this mixture aside.
  2. Tear the kale leaves off of the stems. Stems do not taste good in kale chips! Tear or cut the leaves into small pieces–small enough to put in a salad.
  3. Drizzle the mixture over the kale, and massage everything together with your hands. The goal is to get every last leaf covered in the mixture.
  4. Dehydrate overnight or until crisp.

Recipe #2 – Creamy Garlic and Lemon (Nut-free)

Ingredients

  • 1/4 c flax oil (again, extra virgin olive oil works here, too)
  • juice of 1 1/2 lemons
  • 1 TBS cold-pressed sesame oil
  • 1/2 TBS agave nectar
  • 1/2 TBS gluten-free soy sauce
  • 2 cloves garlic
  • 1/2 c water
  • 1 small avocado
  • 10 c kale (about 2 medium bunches)

Instructions

  1. (Instructions are same as in recipe #1!)

Recipe #3 – Sweet & Spicy Almond

Ingredients

  • 3/4 c almonds
  • 1/4 c Brazil nuts
  • 2 TBS agave nectar
  • 1 tsp Tandoori seasoning (or chili powder)
  • juice of 1 lime
  • 1 TBS gluten-free soy sauce
  • 1/4 tsp cayenne pepper
  • 2 TBS nutritional yeast flakes
  • 1/2 c water
  • 10 c kale

Instructions

  1. (Instructions are same as in recipe #1!)

Recipe #4 – Balti Garlic (Soy-free)

Ingredients

  • 1/2 c Brazil nuts
  • 2 TBS pine nuts
  • 1 TBS miso
  • 1/4 c nutritional yeast
  • 1 TBS Balti seasoning (it’s an Indian spice)
  • 2 cloves garlic
  • 2 TBS flax oil (or extra virgin olive oil)
  • 1/2 c water
  • 10 c kale (about 2 medium bunches)

Instructions

  1. (Still same instructions as recipe #1!)
