I’m Maya 👋 As a lifelong allergy sufferer, I know firsthand the struggles of navigating a world filled with hidden allergens and limited options. I’m also the type of person who, if I can’t go out and buy what I want, I’ll just make it myself, and for over a decade, that’s what I’ve been doing.
Our mission is to create a welcoming space where everyone can indulge in the sweetness of life, without worrying about problem foods.
The Coconuts and Sunshine Difference
For those with sensitivities, discerning palates, and a keen eye for ingredients, our products boast several key features that make a big difference:
- Entire bakery menu made without dairy, eggs, or peanuts. Many of our items are school-safe, being made without the Big 9 allergens as well. The Big 9 allergens are: milk, eggs, fish, shellfish, tree nuts, peanuts, wheat, soy, and sesame.
- Clean keto-friendly options available. In these products, we most frequently use erythritol, stevia, and monk fruit sweeteners (no sucralose, aspartame, or saccharin)
- Owned and operated by a lifelong allergy-sufferer who understands the importance of preventing cross-contamination.
- Woman-owned, local, small business. We’re still small enough of an operation to care about the details.
- Safe cooking surfaces only used to produce our products. All of our baked goods are:
- Mixed in stainless steel or glass bowls with non-plastic utensils
- Baked using uncoated stainless steel or food-grade silicone bakeware (silicone heated to less than 400 degrees).
- Clean ingredients. When sourcing ingredients, we pay attention to things such as:
- While we are not able to afford an organic certification, we choose many ingredients that are grown without pesticides, and we are happy to share the brand names used to make our products; just ask!
- We use coconut oil and/or avocado oil as the primary fat sources in the vast majority of our offerings
- We preferentially source cocoa and cacao from brands which are known to rate low in heavy metals, according to the results of recent available reporting and independent lab testing investigations
- Knowing allergies personally, especially those to wheat/gluten, we are aware that certain grains and flours risk potential contamination with wheat if not certified gluten-free. So, for the curious, here are some of the brands we source for:
